The farm Taverna Setteventi produces for more than 30 years extra virgin olive oil Monovarietale Ravece, certified organic. The olive groves are cultivated in the municipality of Flumeri at an altitude between 400 and 600 m s.l.m. in soils characterized by steep slopes with different exposures. These are newly built plants which are between 30 and 40 years old. The olive groves are not irrigated and the land is exclusively chopped. The company has a very modern mill. The milling activity has been carried out for almost thirty years and for this service the best technologies on the market have been chosen to ensure the highest quality of the extracted oils. The plant has a two-stage centrifuge without separator which maximises the extraction of polyphenols.
